Classic Mac N Cheese

Serves 2-3

Ingredients:

10 oz macaroni pasta
4 cups mild cheddar cheese, grated
2 cups whole milk
½ cup cream
5 tbsp butter
5 tbsp plain flour
1 tsp salt
½ tsp black pepper

Method:

  1. Cook the pasta al dente in salted water as per the cooking instructions on the packaging.
  2. In a separate pan melt the butter then add in the milk and flour. Cook for 5-6 minutes, or until the milk begins to simmer then add the cheese, cream and salt.
  3. Drain the pasta then mix into the cheese mixture, stirring to coat. Cook for a further 2 minutes then season with black pepper and serve.

Italian Mac N Cheese

Serves 2

Ingredients:

8 oz macaroni pasta
2 cups ricotta cheese, crumbled
1 ½ cups parmesan cheese, grated
1 cup pancetta, cubed
1 ½ cups whole milk
½ cup cream
5 tbsp butter
3 tbsp plain flour
1 tbsp olive oil
Handful fresh basil, chopped
1 tsp salt
½ tsp black pepper

Method:

  1. Cook the pasta al dente in salted water as per the cooking instructions on the packaging.
  2. Heat the olive oil over medium heat then add the pancetta and cook for 4-5 minutes, or until browned and crispy. Add in the chopped basil and set to one side.
  3. In a separate pan melt the butter then add in the milk and flour. Cook for 5-6 minutes, or until the milk begins to simmer then add the cheese, cream and salt.
  4. Drain the pasta then add to the cheese mixture along with the pancetta
